Linzer cookies offer so many possibilities. Today’s project combines a buttery shortbread cookie and 2 kinds of jam to create cookies worthy of any poker night. Here is how to make them:

Poker Night Linzer Cookies
 

makes 12 cookies
Ingredients
  • 1½ stick butter, room temperature
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2½ cups flour
  • ½ cup strawberry jam
  • ½ cup blackberry jam

Instructions
  1. To make cookie dough, in the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar together on high speed until light and fluffy. Add the egg and vanilla extract and mix on medium speed to incorporate. Add the flour and mix on low speed until the dough comes together.
  2. Roll between 2 pieces of plastic wrap and refrigerate for 30 minutes. In the meantime, preheat your oven to 350 degrees F.
  3. Cut out your cookies and place them on baking sheets. Bake for 12 minutes or until the edges start to turn golden.
  4. Spread jam on solid cookies (no cut-outs).
  5. Place cookies with cut-outs on a cooling rack and dust with confectioner sugar.
  6. To assemble, place sugar-dusted cookies on top of jam-covered cookies.

To make the dough, in the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar together on high speed until light and fluffy:

Using a pairing knife, cut dough into small rectangles:

Using tiny cookie cutters, cut out windows into half of the cookies:

 Bake at 350ºF for 10 minutes.

Once the cookies have cooled, spoon about 2 tsp of jam onto each plain cookie (no cut-outs). Use strawberry jam for half of them and blackberry jam for the other half:

 Place cookies with cut-out shapes on a cooling rack and dust with confectioner sugar:
